I recently shared this recipe on my TikTok (go check me out there BeWellWithDanielle) because it is a quick and easy meal that I like to have on hand. This soup is filled with nutrients for a great pick me up meal. I like to make a big batch ahead of time and then have it available when I need a quick lunch, dinner or even snack!
Ingredients:
- 2 carrots
- ยฝ onion
- 3 stalks of celery
- Olive oil
- 1 head cauliflower
- 1 box vegetable broth
- Paprika
- Oregano
- Rosemary
Recipe:
- Chop up 1 cauliflower and bake in the over at 425 for 30 mins.
- Cut up carrots, onion, and celery and sautรฉ in olive oil
- Add baked cauliflower to the sautรฉed vegetables.
- Add seasoning of choice, I like paprika, oregano and rosemary.
- The add 1 box of vegetable broth and 2 cups of water
- Allow to cook for 20 mins and then puree soup and enjoy!
